Spiked Ginger-Mint Lemonade
Ginger-mint lemonades are great, but spiked ones are just awesome. They are easy and can be made in large portions. Here, the ingredients are measured to 8 servings.

Ingredients

For the cocktail:

Citrus vodka – 1 bottle (750 ml)

Fresh lemon juice – 2 cups

Lemons – 2 sliced

Mint leaves – 4 sprigs

For the syrup:

Chopped mint leaves – 1/2 cup

Peeled and chopped ginger – 1/2 cup

Sugar – 1 cup

Water – 2 cups

To make the syrup, add chopped mint, ginger, sugar, and water in a saucepan and simmer over medium heat while whisking the mixture to dissolve the sugar. Once the sugar has been dissolved, remove from heat and let the mash rest for about an hour. Then strain it through a sieve in a jar or bowl. Once the syrup has returned to room temperature, close the lid and refrigerate until the syrup turns chill. This syrup can be made one month ahead and refrigerated for convenience too.

Now, to make the cocktail, pour vodka, fresh lemon juice, ginger-mint syrup and 4 cups of water in a big jar and stir. Finally, ladle the spiked ginger-mint lemonade into glasses filled with ice and garnish with sliced lemon wheels and mint sprigs.
